Method

1.Lightly spray heated grill plate (or grill or barbecue), cook chicken until browned both sides and cooked through, cool. Use forks to shred chicken.
2.Meanwhile, slice cucumber into long, thin strips with a vegetable peeler. Combine cucumber, vinegar, sugar, chilli, coriander, mint and sauce in medium bowl, stand 10 minutes.
3.Fill pittas equally with chicken, pickled cucumber and lettuce, season. Serve with a squeeze of lemon.

Freeze leftover pitta breads to use in later recipes.
