Cheesy omelettes

1.Beat eggs and the water with fork in medium jug.
2.Heat half the butter in medium frying pan, swirl pan to coat with butter. Pour half the egg mixture into pan, tilt pan to spread mixture evenly, cook over medium heat until almost set.
3.Sprinkle half the cheese over omelette, fold omelette in half. Slide omelette onto plate, keep warm. Repeat to make another omelette.

You will need a frying pan with a 20cm (8-inch) base for this recipe. You can add finely chopped fresh flat-leaf parsley or chives to the egg mixture before cooking, if you like.
