1.Heat 1 tablespoon olive oil in a large saucepan on medium, add 1 chopped onion and cook for 3-5 minutes, until soft.
2.Stir through 2 seeded, finely chopped red capsicum, 2 grated green apples, 1 firmly packed cup brown sugar, 1/2 cup apple cider vinegar and 10 cloves. Bring to boil.
3.Reduce heat and simmer for 1 1/2 hours, until relish thickens and liquid is almost absorbed.
4.Serve with spicy sausages, grilled meat or cheese.
