Blinis with goat’s cheese

1.Sift flours and baking powder into large bowl. Whisk in milk, egg and half the butter until smooth.
2.Whisk cheese and cream together in small bowl; season.
3.Heat large frying pan on medium heat; grease with a little remaining butter. Cook heaped teaspoon measures of batter, in batches, about 1 minute each side or until golden.
4.Top each warm blini with cheese mixture, sauce and mint.

You can make the blinis a few hours ahead; reheat, covered with foil, in a 100°C/210°F oven about 5 minutes. Assemble just before serving. Remove goat’s cheese from refrigerator 30 minutes before using to soften it.
