Beetroot with skordalia

Sweet, tender beetroot tastes fantastic paired with a punchy Greek skordalia.

1.Boil or steam unpeeled beetroot until tender; drain. Peel while still warm. Cut beetroot into wedges; sprinkle with salt.
2.To make skordalia, boil or steam potato until tender; drain. Mash potato until smooth; cool. Blend or process garlic, salt, water and juice until smooth. With motor operating, add oil in a thin stream; blend until thick. Stir in potato.
3.Serve beetroot with skordalia.
