Barbecued haloumi with tomato salad

Haloumi is a firm, cream coloured sheep's-milk cheese matured in brine; it is somewhat like a minty, salty feta in flavour, and can be grilled or fried, briefly, without breaking down.

Ingredients

Method

1.Combine onion, tomato, basil, oil and juice in medium bowl; season to taste.
2.Halve cheese lengthways then cut in half crossways; cook on heated oiled grill plate (or grill or barbecue) until browned both sides. Serve haloumi with tomato mixture.

Haloumi should be eaten while still warm as it becomes tough and rubbery on cooling.
