Gozleme

A tasty market stall favourite you can make at home.

Gozleme or gözleme is a Turkish street food, made with grilled flatbread that’s traditionally filled with flavourful lamb or spinach and feta (but could have other fillings too). We’ve included both of these popular options for this recipe, so you can choose one or make both. Do it like they do in Turkey and don’t forget the squeeze of lemon at the end.

Method

Gozleme

1.

Combine flour and salt in large bowl. Gradually stir in the water; mix to a soft dough. Knead dough on floured surface about 5 minutes or until smooth and elastic. Return to bowl; cover.

Make lamb filling. Heat oil in large frying pan; cook garlic and spices until fragrant. Add lamb; cook, stirring, until browned. Add undrained tomatoes; simmer about 15 minutes or until liquid is almost evaporated. Stir in parsley.

Make spinach and cheese filling. Combine ingredients in medium bowl.

Divide dough into six portions; roll each portion on floured surface into 30cm (12-inch) square. Spoon spinach and cheese filling onto dough squares, spreading filling across centre of squares; top each with equal amounts of lamb filling. Fold top and bottom edges of dough over filling; tuck in ends to enclose.

5.

Cook gözleme, both sides, over low heat on oiled grill plate, brushing with oil, until browned lightly and heated through.

What is a gozleme made of?

Gozleme is made of a simple flatbread using plain flour, oil, warm water and a bit of salt, which is then folded over a filling to encase it before the bread is cooked on a grill plate. You can choose just about anything for the filling but two popular, traditional options are spiced lamb and spinach and cheese. Other options could include chicken, beef, spiced potato or mushroom and cheese.

Is gozleme like quesadilla?

Both gozleme and quesadilla are traditional street foods and can look similar at first glance. But gozleme originally come from Turkey and have a softer flatbread around the filling, while quesadilla are from Mexico and typically use corn or wheat tortillas. The flavours used in Turkish and Mexican cooking also add a point of difference but both are delicious in our opinion.

What is the difference between gozleme and pide?

While both are Turkish dishes, the flatbread used for gozleme completely encases the filling and with pide only the sides of the flatbread enclose the filling. In fact, some pide are simply flatbread with toppings.
