Strawberry hotcakes with blueberry sauce

You get a double berry hit with these fat little hotcakes studded with strawberries and slathered with blueberry sauce. Perfect for an indulgent brunch or special breakfast.

Blueberry sauce


1.To make blueberry sauce, combine ingredients in a small saucepan and bring to the boil, stirring constantly. Reduce heat and simmer 2 minutes. Remove from heat allow to cool 10 minutes. Blend or process blueberry mixture until smooth.
2.Using an electric mixer, beat egg-whites in small bowl until soft peaks form. Combine egg yolk, apple sauce, extract, yoghurt, flour and strawberries in large bowl and fold in egg-whites.
3.Pour ¼ cup of the batter into large heated greased frying pan. Cook over low heat, about 2 minutes or until bubbles appear on the surface. Turn hotcake and cook until lightly browned on other side. Remove from pan and cover to keep warm. Repeat with remaining batter.
4.Serve hotcakes with blueberry sauce.
