1.In a large bowl, gently toss peaches, rocket leaves and pecans together. Top with broken up chunks of goat’s cheese.
2.DRESSING: In a small bowl, whisk all ingredients together. Season to taste.
3.When ready to serve, drizzle dressing over salad.
Replace peaches with nectarines if preferred. If liked, add some crisp prosciutto – cook in a lightly oiled frying pan 1-2 minutes, turning once. Break up when cold and add to salad.Note
