Method

1.Remove rind from lemons using a vegetable peeler, avoiding white pith; reserve lemons. In a large saucepan, combine rind, sugar and the water. Stir over low heat until sugar dissolves; bring to the boil. Reduce heat; simmer, uncovered, without stirring, about 10 minutes or until syrup is thickened slightly; cool.
2.Squeeze juice from lemons ­(you will need 1 cup (250ml) lemon juice). Add juice to syrup, strain into large jug; pour into sterilised bottles, keep refrigerated.
3.Just before serving, mix by adding four parts sparkling mineral water to one part lemonade, or to taste.

Store lemonade syrup refrigerated for up to two weeks.
