Ultimate greek salad

Light, fresh and brimming with flavour.

This classic Mediterranean salad gets it flavours from olives, tomato, cucumber and fetta. Greek salad pairs perfectly with chicken, lamb or beef or enjoy it on its own.

Ingredients

  • 4 medium (300g) ripe egg tomatoes, sliced
  • 2 lebanese cucumbers, sliced lengthways
  • 1/4 medium (45g) red onion, sliced thinly
  • 1/3 cup (60g) kalamata olives
  • 150 gram feta cheese, crumbled
  • 1/2 teaspoon dried oregano leaves
  • 1/4 cup (60ml) extra virgin olive oil
  • 1 tablespoon red wine vinegar

Method

    Combine the tomato, cucumber, onion, olives and feta in a serving bowl.

    Sprinkle with the oregano.

    Combine the oil and vinegar in a small bowl; season to taste with salt. Drizzle the dressing over the salad.

Notes

With a twist : Chopped finely, this salad could be spooned over grilled fish or barbecued lamb. Traditional Greek dried oregano, rigani, is sold in a dried bunch. It is perfect for this salad as the flavours are more intense.
