Warm potato and chorizo salad

Fill up on something substantial and incredibly tasty after a long weekend walk with this warm potato and chorizo salad. With spinach, red onion and cherry tomato too, it's full of nutrients as well as energy.

1.Boil, steam or microwave potato about 10 minutes or until tender; drain.
2.Fry chorizo in a dry heated frying pan until crisp on both sides; remove from pan.
3.Add potato to same pan; cook, stirring gently, until browned. Remove from pan.
4.Remove pan from heat, add combined oil, vinegar and sugar to pan. Return to heat, boil, uncovered, for 2 minutes or until reduced slightly.
5.Place potato and chorizo in large bowl with onion, spinach and tomatoes; drizzle with vinegar mixture. Toss gently to combine.
