Mirin and tamari dressing
1.Make mirin and tamari dressing. Combine ingredients in screw-top jar; shake well.
2.Cook noodles in large saucepan of boiling water until tender, drain. Rinse under cold water; drain.
3.Meanwhile, discard mushroom stalks. Place mushroom caps in small heatproof bowl, cover with boiling water; stand 15 minutes or until softened. Drain then slice mushrooms.
4.Toss noodles and mushrooms with remaining ingredients and dressing in large bowl.
