Method

1.Whisk eggs in a medium bowl with half the pepper and half the fish sauce. Heat a wok over high heat. Add 2 teaspoons of the oil and 1 tablespoon of the green onion; swirl to coat.
2.Add a quarter of the egg mixture, swirling to form a 20cm round. Cook for 1 minute; transfer to a plate. Repeat with another 2 teaspoons oil, green onion and egg three times to make four omelettes in total.
3.Heat remaining oil in wok. Add pork; cook, using a wooden spoon to break up any clumps, for 10 minutes or until browned and cooked through. Add coriander root and stems, remaining green onion, garlic and remaining pepper to wok; stir-fry for 30 seconds.
4.Add vegetables; stir-fry for 1 minute. Stir through combined remaining fish sauce, oyster and soy sauce, and sugar; cook for 2 minutes or until reduced slightly. Stir through coriander leaves.
5.Divide pork mixture among omelettes; fold up to enclose. Serve immediately.
