Capsicum salsa


1.Preheat oven to 220°C/425°F. Oil large baking dish.
2.Halve unpeeled potatoes lengthways. Place potato, in single layer, in dish; spray lightly with cooking-oil spray. Roast about 45 minutes or until browned lightly and tender.
3.Meanwhile, to make capsicum salsa, combine capsicum, onion, tomato, coriander, french dressing, garlic and cumin in medium bowl.
4.Cook beef on heated oiled grill plate (or grill or barbecue) until browned both sides and cooked as desired. Cover beef; stand 5 minutes.
5.Serve beef with capsicum salsa, roasted potatoes and rocket.
