Method

Sautéed potatoes (pommes sautées)

1.Cut potatoes into 1cm slices.
2.Heat oil and butter in large frying pan; cook potato, covered, over medium heat, turning occasionally, until browned.
3.Reduce heat; cook, tossing pan to turn potato slices, about 10 minutes or until tender.

Desiree, bintje or russet burbank potatoes are all good choices for this recipe.
