Method

1.Wash rice with cold water until water runs clear; drain well.
2.Combine oil, garlic, onion and saffron in 2.5-litre (10-cup) rice cooker. COOK, stirring about 2 minutes or until onion softens.
3.Stir in rice and stock; secure lid. COOK 10 minutes, stirring occasionally. Add seafood, juice, chilli and tomatoes; secure lid. COOK about 5 minutes or until cooker automatically switches to KEEP WARM.
4.Add capsicum to cooker; secure lid. Switch to KEEP WARM; stand 10 minutes. Season to taste. Sprinkle with coriander just before serving.
