Roast chicken with tarragon cream

Take a twist on the classic Sunday roast with this fresh and flavoursome roast chicken with tarragon cream! Moist, succulent and so delicious!


Taragon cream


1.Preheat oven to 200°C.
2.Cook chicken, in batches, in heated oiled large flameproof baking dish until browned all over. Remove from dish.
3.Cook onion and garlic in same dish, stirring, until onion softens. Return chicken to dish with bay leaf, wine and the water; bring to the boil.
4.Transfer dish to oven; roast, uncovered, about 35 minutes or until chicken is cooked through.
5.Meanwhile, make tarragon cream: Beat cream cheese until smooth; stir in remaining ingredients. Season to taste.
6.Serve chicken with tarragon cream.
