Thousand island dressing
1.Arrange lettuce leaves on serving dishes. Top with mango and prawns. Chill until required.
2.To make dressing: In a jug, whisk together all ingredients. Season to taste. Drizzle dressing over salad before serving.
Chopped avocado is also good in this salad. The dressing can be made 2 days ahead. Store, covered, in the fridge.Note
