Method
1.Heat ghee in large heavy-based frying pan; cook mustard seeds, stirring, 30 seconds.
2.Stir in leek, onion, potato, carrot, ginger, cumin seeds, turmeric and chilli powder; cook, stirring, 5 minutes.
3.Add garam masala and salt; cook, covered, over low heat about 10 minutes or until vegetables are tender.
