Method

1.Using your hands, combine pork, garlic, onion, chilli, breadcrumbs, egg and sauce in a medium bowl. Shape mixture into four patties.
2.Cook patties on a heated oiled barbecue flat plate, 15 minutes or until cooked through.
3.Meanwhile, to make caramelised pear, cook pear and red onion on the heated oiled barbecue flat plate until onion softens. Sprinkle combined vinegar and sugar over pear mixture; cook, turning, 10 minutes or until mixture caramelises.
4.Cut bread into quarters; split quarters in half horizontally. Spread dijonnaise on cut sides; sandwich mizuna, patties and caramelised pear mixture between bread.

We used corella pears in this recipe. Dijonnaise is a commercial blend of dijon mustard and mayonnaise, available in supermarkets.
