1.Combine beef and peppers in a medium bowl. Toss to coat beef in pepper mixture.
2.Heat half the oil in wok. In batches, stir-fry beef until browned all over.
3.Heat remaining oil in wok and stir-fry onion and garlic until onion is just tender. Add mushrooms; stir-fry until mushrooms are just tender.
4.Add blended cornflour and the water, then mirin and sauce. Stir-fry until mixture boils and thickens slightly. Return beef to wok; stir-fry until heated through.

Dry sherry can be used instead of mirin.
