Method

1.Heat oil in a large pan over medium heat. Add onion and garlic and cook for 2-3 minutes until onion has softened. Add chicken; cook for a further 5 minutes until chicken is browned. Stir in spices and cook until fragrant.
2.Stir in tomato paste, capsicum, canned tomatoes, stock and beans and simmer, uncovered, for 15 minutes. Remove from heat and season with salt and pepper. Stir in half the chopped coriander.
3.Meanwhile, combine garlic and oil in a small bowl. Brush over tortillas and cook on both sides in a small preheated frying pan.
4.Serve casserole topped with combined avocado, remaining coriander and jalapenos with toasted tortillas.
