Grilled lamb chops with tomato & olive salsa

Avocado, bean and rocket salad makes a great side for these tasty lamb chops served with a cherry tomato and olive salsa. Light, simple and perfectly satisfying.

1.Finely chop half the oregano; combine with chops in a large bowl.
2.Season chops; cook on a heated oiled grill plate (or grill or barbecue) for 4 minutes each side or until cooked as desired.
3.Meanwhile, to make tomato and olive salsa, combine tomato, olives, dressing and remaining oregano in a medium bowl. Season to taste.
4.Serve chops with salsa and rocket.

Make sure the grill plate is hot before cooking the lamb. Cook on one side until the moisture rises to the surface. Turn, only once, and cook until done to your liking. Rest lamb, covered with foil, for 2-­3 minutes.
