Method

1.Heat oil in deep large frying pan. Stir onion and garlic over heat until onion softens.
2.Season fish; add fish to pan with herbs. Cook fish about 2 minutes each side.
3.Add wine, tomato and olives to pan. Place lid on pan and cook about 5 minutes or until fish is cooked as desired. Season to taste.
