1.Cook pasta in a large saucepan of salted boiling water, uncovered, until just tender. Drain.
2.Meanwhile, process mint, garlic, pine nuts, cheese and 60ml of the oil until combined.
3.Heat remaining oil in a medium frying pan. In batches, cook lamb, stirring, until browned.
4.Place mint pesto and cream in same pan; stir well. Add lamb and pasta and stir until hot
