Chickpea, zucchini and pumpkin curry

This delicious vegetable and bean curry can be served as a side dish or as a main dish in its own right.

Ingredients

Method

1.Heat oil in a large saucepan on high. Saute onion and garlic for 2-3 minutes or until tender. Add coriander and cumin, stirring for 1 minute until fragrant.
2.Add tomatoes, chickpeas, pumpkin, zucchini and coconut milk. Season to taste. Bring to the boil. Reduce heat. Simmer, covered, for 12-15 minutes or until vegetables are just tender. Stir in cherry tomatoes and fresh herbs.
3.Serve curry with steamed rice and pappadums. Top with coriander and mint leaves.

Other beans of choice may be added to the mixture. For added heat, add chopped chilli to taste.
