Method

1.Trim the fat from chicken fillets then cut chicken into 2-3cm cubes. Add chicken cubes to a heated, greased, large non-stick frypan, stir over heat until chicken is browned all over. Add fajita seasoning and capsicum and stir over heat for a further 2-3 minutes until chicken is cooked through.
2.Meanwhile, heat the tortillas as directed on the packet. Top each tortilla with some shredded lettuce, grated carrot and chicken, then fold in half to serve.
