Increase the amount of chilli powder, if you want a little extra heat. You could also heat the tortillas on a chargrill plate or sandwich press, if you like; spray the tortillas with a little oil.

1.Combine chicken, spices and half the oil in a large bowl, season.
2.Heat remaining oil in a large frying pan, cook capsicum and onion, stirring, over high heat, for 5 minutes or until soft. Add chopped coriander, transfer to a medium bowl, cover to keep warm.
3.Add chicken mixture to pan, cook, stirring, until browned and cooked through. Return capsicum mixture to pan with the water; cook, stirring, until hot. Season to taste.
4.Meanwhile, heat tortillas in microwave according to directions on packet.
5.Serve chicken mixture with tortillas, sour cream, lime wedges and coriander leaves.
