Save yourself a trip to your local cafe with this gourmet-style bacon and egg roll recipe!

We take the breakfast favourite to the next level by adding fresh chives, basil and parsley, baby spinach leaves and garlic to the recipe.

We also fancy up this cult classic by substituting regular bread rolls for round Turkish bread rolls – they’re easy to toast and are too easy to eat!

One of the best things about bacon and egg rolls is that you can pack in any of your favourite toppings: pineapple, beetroot, tomatoes, you name it! Serve these egg and bacon rolls with a generous amount of our homemade herb aioli.

1.Heat half the oil in large frying pan; cook bacon until crisp. Drain on absorbent paper. Wipe out pan.
2.Heat remaining oil in same pan; fry eggs until cooked to your liking.
3.Meanwhile, preheat grill (broiler). Split rolls, place on oven tray, toast under grill.
4.To make herb aïoli: Peel and crush garlic, combine mayonnaise, garlic and herbs in small bowl; season to taste.
5.Spread herb aïoli on roll bases; top with spinach, bacon and eggs, then roll tops.
