Campfire pancake recipe

Keep your family’s camping kit light with this easy pancake recipe that only needs four ingredients! Cooked over a glowing coal fire, this simple breakfast recipe makes one giant fluffy pancake for the family to share. Just top with canned blueberries, drizzle with the syrup and dig in!

Method

Prepare a fire to glowing coals.

Heat a large cast-iron flat plate or skillet over the fire for 10 minutes or until very hot.

Meanwhile, prepare pancake mix according to packet instructions.

Add oil to the pan; swirl to grease the base and side. Pour in all the pancake mix; cook, covered, for 7 minutes or until set and the base is golden.

Remove pan from the heat; use a spatula to loosen the pancake from the base, then slide pancake onto a chopping board or plate. Invert the pan carefully over pancake; flip over so pancake is back in the pan, cooked-side up. Cook for a further 7 minutes or until golden on both sides and cooked through.

6.

Serve hotcake topped with drained blueberries and some of their syrup. Drizzle with custard, if you like.
