Lightly grease a 1.5-litre (6-cup) ovenproof dish (18cm diameter) (see tips).

Beat butter, sugar and orange rind in a medium bowl using an electric mixer until light and creamy. Add egg yolks, one at a time, beating after each addition. Beat in orange juice and passionfruit pulp. Beat in flour and milk on low speed (mixture may curdle but this is okay).

Pour enough hot water into the base of a 7-litre air fryer pan until 2 cm deep (see tips). Preheat air fryer to 160°C for 3 minutes.

Beat egg whites in a medium bowl using an electric mixer until firm peaks form. Fold half the egg whites into the batter to loosen. Fold through remaining egg whites until just combined.

Pour the batter into the dish and cover with foil. Taking care, place dish in the air fryer basket; at 160°C, cook for 45 minutes. Remove foil and cook for a further 20 minutes or until golden, puffed and a creamy sauce has formed under the pudding. Stand for 10 minutes.

6.

Dust pudding with icing sugar. Serve with vanilla ice-cream or cream.
