Mango and passionfruit fool

Creamy, delicious and perfect for summer-time desserts.
Low-fat mango and passionfruit fool



1.Peel the mango, remove flesh. Blend or process the mango flesh until smooth; you will need 1 cup (250ml) of mango purée.
2.Combine the mango purée with the passionfruit pulp in a medium bowl.
3.Beat the eggwhites and sugar in a small bowl with an electric mixer until soft peaks form. Fold the yoghurt into the eggwhite mixture.
4.Swirl the fruit purée into the yoghurt mixture.
5.Divide the mixture among 4 serving glasses.
