1.Process or blend peaches until smooth.
2.Whisk peach puree with the honey, buttermilk, yoghurt, juice and 2 tsp rind in a large bowl.
3.Pour mixture into a 1 litre (4-cup) container. Cover tightly with foil; freeze for 3 hours or overnight.
4.Beat lassi in a large bowl with an electric mixer until smooth. Return to container, cover and freeze a further 3 hours or until firm. Alternatively, churn lassi in an ice-cream machine according to the manufacturer’s instructions.
5.Serve lassi with extra peach slices and remaining lime rind.
