Dried apricots in cardamom syrup with pistachio ice-cream

1.Combine ice-cream and pistachios in a medium bowl; mix well. Divide ice-cream mixture among 8 x 1/2 cup (125ml) capacity moulds. Cover; freeze overnight or until the ice-cream is firm.
2.Combine the apricots and the boiling water in a medium saucepan; stand for 30 minutes.
3.Add caster sugar, cardamom pods and cinnamon stick to apricots; bring to the boil. Reduce heat and simmer, uncovered, for about 10 minutes or until the syrup is reduced by half. Cool 10 minutes.
4.Wipe ice-cream moulds with a hot damp cloth and turn out onto serving plates. Serve with the apricots and a little of the cardamom syrup.

Ice-cream can be made several days ahead. Apricot mixture can be made a day ahead. Suitable to freeze. Not suitable to microwave.
