Crisp skin duck with spicy salt and mango salsa

Method

Preheat oven to 200°C (180°C fan-forced). Combine salt and spices in a small bowl.

Pat duck breasts dry. Score the skin in a crisscross pattern. Season each breast with 1 teaspoon of the spicy salt.

Heat a dry medium frying pan over medium heat. Cook the duck, skin-side down, for 4 minutes or until the skin is golden. Turn; cook for another minute. Transfer the duck to a shallow roasting pan, skin-side up. Roast for 8-10 minutes for medium, or until done as desired. Transfer to a plate; sprinkle with another 2 teaspoons of the spicy salt. Rest, uncovered, for 5 minutes.

Mango salsa

Meanwhile, combine all ingredients in a medium bowl.

Serve duck with mango salsa, remaining salt mixture; scatter with coriander and sliced chilli.
