Method

1.Preheat oven to 180°C (160°C fan-forced). Grease oven trays.
2.In a small bowl, beat butter, extract, sugar and egg with electric mixer until smooth (do not over-beat). Stir in sifted dry ingredients, then raisins and all the chocolate. Drop level tablespoons of mixture 5cm apart onto trays.
3.Bake cookies about 10 minutes. Stand on trays 5 minutes, then transfer to wire rack to cool.
