Spicy fruit filling
1.Beat butter and sifted icing sugar in small bowl with electric mixer until smooth. Beat in egg until combined. Stir in sifted flours, in two batches. Cover dough; refrigerate 30 minutes.
2.Meanwhile, make spicy fruit filling; cook dates and the water in medium saucepan, stirring, about 10 minutes or until thick and smooth. Stir in spices and soda. Cool.
3.Preheat oven to 180°C. Line oven trays with baking paper.
4.Roll dough between sheets of baking paper to 30cm x 40cm rectangle; cut into four 7.5cm x 40cm strips. Spoon filling into piping bag fitted with large 1.5cm plain tube; pipe filling down centre of each strip. Fold edges in until they meet to enclose filling; turn seamside down onto board. Cut each roll into 10 pillow shapes; place pillows, seam-side down, on trays. Brush pillows with milk, sprinkle with caster sugar.
5.Bake pillows about 20 minutes; cool on trays.
