Method

1.Toast bread; rub one side of toasts with garlic.
2.Meanwhile, place half the rocket in a medium bowl with onion, beetroot and balsamic glaze; toss gently to combine. Season to taste.
3.Spread toasts with cream cheese; top with remaining rocket, cucumber and salmon. Sprinkle with dill.
4.Serve bruschetta with rocket salad.

Use a vegetable peeler to slice the cucumber length-ways into thin ribbons. Use disposable gloves when handling beetroot top prevent staining your fingers. If taking to work, toast the bread at lunch time just before you’re ready to assemble.
