Fluffy mock cream frosting


1.Preheat oven to 180°C/350°F. Line 12-hole (1-tablespoon/20ml) mini muffin pans with the paper cases
2.Make cake according to directions on packets. Drop 2 level teaspoons of the mixture into each paper case; bake about 15 minutes. Stand cakes in pans 5 minutes; turn, top-side up, onto wire rack to cool
3.Meanwhile, make fluffy mock cream frosting. Stir milk, the water and sugar in small saucepan over low heat until sugar dissolves. Sprinkle gelatine over the extra water in cup, add to pan; stir sugar syrup until gelatine dissolves. Cool to room temperature
4.Beat butter and extract in small bowl with electric mixer until as white as possible. While motor is operating, gradually pour in cold syrup in a thin, steady stream; beat until light and fluffy. Mixture will thicken more on standing
5.Divide frosting equally into five small bowls; tint each bowl with one of the suggested colours: red, orange, green, blue and purple
6.Pour the jelly crystals into separate small bowls. Match the colours of the frosting with the jelly crystals. If the crystals are too pale, make them darker by rubbing some colouring through the crystals
7.Spread red frosting over the tops of 35 cakes; dip into red jelly crystals.
8.Spread orange frosting over the tops of 33 cakes; dip into orange jelly crystals.
9.Spread green frosting over the tops of 29 cakes; dip into green jelly crystals.
10.Spread blue frosting over the tops of 26 cakes; dip into blue jelly crystals.
11.Spread purple frosting over the tops of 21 cakes; dip into purple jelly crystals
12.Position cakes, starting with the red ones, on prepared board. Secure the cakes to prepared board with a little frosting
13.Position the pot of gold; line with tissue paper then fill with chocolate coins and chocolates.
14.Pull pieces of cotton wool into cloud shapes and position on board

Make one packet of cake mix at a time. Bake two trays of cakes together and, while they’re baking, put the cake mixture into the next two trays. For the best effect, match the paper cases to the colours of the frosting and jelly crystals.
