Ingredients

Method

1.Preheat oven to 180°C/350°F. Grease oven trays; line with baking paper.
2.Beat butter, rind and sifted icing sugar in small bowl with electric mixer until just combined; stir in polenta and sifted flour.
3.Shape mixture into 30cm rectangular log; cut into 1cm slices.
4.Place slices on trays 2cm apart. Bake about 15 minutes.
5.Stand on trays 5 minutes; transfer to wire racks to cool.
