Parmesan crisps

Although these crisps make a great snack on their own, you can also use them to accompany dips or soup. Make crisps in two large sheets, then break into shards to serve. Add sesame seeds to the mix if you like.

1.Combine cheese, pepper and oregano in a medium bowl.
2.Place 2 teaspoons of mixture, 3cm apart, on baking paper-lined oven trays; flatten with fingertips.
3.Bake, uncovered, in moderately hot oven 4 minutes; cool on trays.

The flavourings can be omitted and the plain crisps topped with olive paste and a little sour cream for finger food.
