Mashed potato and bacon bake

You'll never have plain old mashed potato again after this delicious bacon and cheesy potato bake.

Method

1.Preheat oven to 180°C/350°F. Oil 2.5-litre (10-cup) ovenproof dish.
2.Boil steam or microwave potato until tender; drain.
3.Meanwhile, cook bacon in a large frying pan, stirring, until crisp; drain on paper towel.
4.Mash potato in a large bowl with sour cream, butter and milk until smooth. Stir in half the bacon, half the onion and half the cheese. Season. Spread mixture into dish; sprinkle with remaining bacon, onion and cheese.
5.Bake for 40 minutes or until browned lightly.
