Butterscotch sauce


1.Preheat oven to 180°C (160°C fan-forced). Grease deep 20cm-round cake pan; line base with baking paper, coat with cooking-oil spray.
2.Arrange nuts over base of prepared pan; drizzle with maple syrup.
3.Combine the water, figs and soda in bowl of food processor. Cover with lid; stand 5 minutes. Add butter and sugar; process until almost smooth. Add eggs and flour; process until just combined. Pour into prepared pan; bake about 55 minutes. Stand cake 5 minutes; turn onto wire rack.
4.To make butterscotch sauce; stir ingredients in small saucepan over heat until smooth; bring to a boil. Boil, uncovered, about 2 minutes or until mixture thickens slightly.
5.Serve cake with sauce and, if desired, ice-cream.

Either maple syrup or maple-flavoured syrup can be used in this recipe.
