Method

1.Grease a 19cm x 29cm lamington pan, or line base with paper and grease paper.
2.Cream butter and sugar in small bowl with electric mixer. Gradually add sifted flour and cornflour, turn on to lightly floured surface and knead for 5 minutes. This shortbread base requires kneading to make it crisp. Spread evenly over base of prepared pan.
3.Bake in 180°C/355°F oven 15 minutes or until lightly browned.
4.Combine condensed milk, egg yolks, lemon rind and juice in bowl and pour over base. Bake further 10 minutes. Beat egg whites in small bowl until soft peaks form, gradually adding extra sugar, beat until all sugar is dissolved.
5.Add desiccated coconut, spread over filling, sprinkle with flaked coconut, bake further 10 minutes or until golden brown. Cool in pan before cutting.
