1.Preheat oven to 180°C (160°C fan-forced). Lightly grease 2 x 12-hole shallow patty pans. Cut 24 x 6.5cm rounds from pastry. Press into prepared recesses.
2.Cut remaining pastry using 3cm card cutters. Place on baking paper-lined tray. Brush with egg-white. Sprinkle with sugar.
3.Bake tart cases and shapes for 8-10 minutes until golden. Spoon 2 teaspoons jam into tart cases. Top with shapes.
