Method

1.Make jelly following packet directions. Tint with a little blue colouring. Place take-away container lid on a small tray; fill with about ¼ cup (60ml) of the jelly. Refrigerate for 1 hour or until set.
2.Melt white chocolate. Place ice-cream cones on an oven tray lined with baking paper; drizzle cones with some of the melted chocolate to completely cover, sprinkle with coconut. Stand for 10 minutes or until chocolate sets.
3.To make snowmen, secure 2 Raffaello chocolates together with a little melted chocolate. Secure trimmed licorice strap for eyes and trimmed orange licorice allsort for nose, with a little melted chocolate. Cut sour strap lengthways into coloured sections; use the blue and green strips from the sour strap to make scarfs, wrap around snowmen.
4.Trim one cake layer into a 12cm round; place muffin on top. Position a large marshmallow next to muffin for entrance of igloo. Secure cake rounds, side by side, on cake board with a little frosting. Using picture as a guide, use a small sharp knife to carefully cut an 11cm round with a 1cm deep cavity into the larger cake round; scoop out the cake from the cavity with a teaspoon. Spread frosting all over cake.
5.Using picture as a guide, trim remaining licorice strap for igloo door. Position marshmallows on muffin for the igloo. Position cones and snowmen on cake. Just before serving, carefully push the take-away container lid into the cavity. Sprinkle cake with extra coconut.

You can make the frozen lake out of ready-made white icing if you like.
