Garlic mushrooms with egg and spinach

Method

1.Preheat oven to 200°C (180°C fan forced).
2.Trim stems from mushrooms. Place mushrooms, bottom-side up, on oven tray. Combine garlic, parsley and oil in small bowl, brush mushrooms with mixture, season. Bake 25 minutes or until tender.
3.Meanwhile, boil, steam or microwave spinach until wilted, drain.
4.Half-fill a medium saucepan with water, add vinegar, bring to the boil. Break 1 egg into a cup. Using a wooden spoon, make a whirlpool in water, slide egg into whirlpool. Repeat with remaining egg. Return to the boil. Cover pan, remove from heat, stand 4 minutes or until a film of white sets over the yolks. Using a slotted spoon, remove eggs, drain on paper.
5.Serve mushrooms topped with spinach and egg, season to taste.
