.Preheat oven to 180°C/160°C fan-forced. Grease 2.5-litre (10-cup) Dolly Varden pan.
.Make cakes according to directions on packets; pour mixtures into pan. Place pan on oven tray; bake about 1 hour. Stand cake in pan 5 minutes; turn onto wire rack to cool.
.Trim cake so it sits flat on board or plate. Remove legs from doll if necessary; trim bodice neatly around waist. Scoop out small hole from top of cake large enough to fit doll’s body. Style doll’s hair, as desired.
.On surface dusted with icing sugar, knead icing until smooth. Knead purple colouring into icing to make a pale purple. Reserve a piece of icing about the size of a small apple; tint a darker shade of purple then wrap in plastic wrap (this is for the flowers on the dress).
.Brush cake all over with jam.
.To make skirt, roll large piece of icing into a circle almost large enough to cover cake (this allows for stretching), about 28cm in diameter. Using rolling pin, lift icing onto cake. To make flounces in skirt, position scrunched soft paper towel or tissues under hem of skirt, trim flounces to shape, if necessary, using scissors. Leave paper under flounces until icing becomes firm.
.Cut a small hole in top of icing for doll; position doll.
.Roll out reserved icing; cut out flower shapes. Brush the backs of flowers with a tiny amount of water; position on skirt.
.Push butterfly wings on stick into cake at back of doll. Make a sash from ribbon; wrap around doll’s waist. Decorate sash with butterfly. Position butterfly wand in doll’s hand.

Only remove the legs of the doll if she’s too tall for the cake. Just push the doll, with legs, gently through the cake until the doll’s body is in the right position. Dolly Varden cake pans can be bought or hired from cake decorating suppliers.
