Apple date filling
1.Preheat oven to moderately hot. Grease 25cm x 30cm Swiss roll pan; line base and two long sides with baking paper, extending paper 2cm above edge of pan.
2.Sift flours into large bowl; rub in butter, stir in caster sugar. Add egg and enough water to mix to a firm dough. Knead on floured surface until smooth, cover; refrigerate 30 minutes.
3.Make apple filling. Combine ingredients in small saucepan; simmer, covered, about 5 minutes or until mixture is pulpy. Blend or process until smooth; cool.
4.Roll out half of the dough until large enough to cover base of prepared pan; spread with cold apple date filling. Roll out remaining dough until large enough to cover filling; brush with milk, sprinkle with raw sugar.
5.Bake in moderately hot oven about 25 minutes; cool in pan before cutting. Sprinkle with extra caster sugar.
